Another great recipe and easy to make. When it comes to chicken, it can become very quickly very dry if you overcook it.. and ou boy how easy is to overcook the chicken. So this one leaves chicken always nice and most due have been filled with cheese.
Ingredients: (serves two)
2 chicken fillet
7 slices streaky rasher
50 g of cream cheese
2 tbsp grated parmesan cheese
Preheat the oven to 180C degrees.
Make the filling: Chop 1 slice of rasher into small pieces and out it in the small dish. Add the cream cheese and parmesan. Mix it all up.
Cut the chicken along one of the side of the fillet, Stuff it with filling and wrap each chicken with 3 rashes. You can try to close the side with toothpick if it wont stay clsoed.
Place it in to cookin tray or Pyrex dish and bake in the oven for 30 minutes.
Serve with salad and baby potatoes, use the juice at the bottom of the dish.
