This is my favourite one to do when I have visitors over. As it takes only few inexpencive ingredients but feeds a big bunch of people. You don’t have to hoover over the cooker too long and you can also get kids involved.
Ingredients (feeds 4 but double amounts for bigger crowd)
2 tbls olive oil
2 tbls butter
1 sweet potatoe
salt and pepper
75g of semi soft cheese, I used Gruyere but Gouda or Emmental would work as well
Use over proof skillet/pan, heat up oil and butter on mid heat and add onions. Slowly cook them in fat until they look soft and slightly see through.
Add the sweet potato and fry for about 20-30 minutes, stirring occasionally to make sure that onion won’t burn.
Meanwhile, mix eggs in a separate bowl with salt and pepper and spring onions. When potatoes are cooked, add the mix to the skillet, top it with onions and bake it in oven another 20 minutes on 180C or until the eggs get nice and fluffy.
Serve it with fresh salad straight away. It is also great meal to bring to work. Just heat it up, add some salad and you have wholesome meal on the go.
