Super lunch with walnut caramel and roasted grapes on soda bread with ricotta.

This sweet and sour quick tasty meal is really easy and tasty. You could make the walnuts caramel before and store it in your cupboard. 

Ingredients ( makes two)

100 g of red grapes

1tbs of olive oil

1/2 tbs balsamic vinegar

 50g walnuts

2 tbs of brown sugar

1 tbs of honey

1 spring of rosemary

100g of ricotta

2 slices of Sourdough bread

Instructions 

Heat the oven to 180c of fan. 

Cut the garpes to half and toss with olive oil and balsamic vinegar. 

Spread to the parchment paper of the baking tray and roast about 20 minutes.

Mean time roast walnut on the pan for five minutes, toss them around, add sugar and honey and let it bubble, add rosemary and let it infuse for 2-3 minutes. 

Poor out of the pan on to parchment paper and let it cool.

Put ricotta into bowl, add some slat and pepper and whip it with hand mixer.

Toast the bread, and take grapes out from the oven.

Spread the ricotta, scatter the grapes over it. Crack the walnuts into pieces and top it on the bread.
