Spicy courgette toast with cooling mint and salty feta

This was lovely surprise and honestly might change my mind about the courgettes. I find courgettes rather tasteless and the texture when cooked rather appalling. So trying now marinated with cheese and mint, it was very refreshing. It could be also great as small appetizer for the event as it does not get that soggy when it has set in its marinade.

Ingredients (makes 2 )

1 small courgettes

1 tbs olive oil

1tsp chili flakes

Handful fresh mint leaves chopped roughly

Zest of 1/2 lemon

Sourdough bread

100g feta cheese

Salt and pepper to taste

Instructions:

Use peeler to slice thin slices from the courgettes

Place it in bowl and toss it with chili flakes, olive oil and mint leaves.

Add the lemon zest and mix, leave on the side for about 5-10 minutes to marinate. The courgettes gets nice and soft in texture.

Toast your bread, add the courgettes, top it up with feta and grind some fresh salt and pepper over it.

Quick and easy and super tatsty.

ENJOY!!
