Tasty Halloumi sandwich for filling lunch

Take your lunch out a step further with this Halloumi and harissa dressing toast. Super filling and healthy, spicy and fragrant. If you are vegan, replace Halloumi with tofu instead.

This is super tasty lunch idea for root chakra opening.

Ingredients:

1tsp harissa

1 garlic clove, crushed

1/2 Lemon juice

2 tsp honey

2tbs extra virgin olive oil

1 tbs pumpkin seeds

4 slices chia seed bread

250g Halloumi cheese

Salad leaves

Salt and pepper to taste

Instructions:

Make dressing by mixing together harissa, garlic, lemon juice, honey and oil in the jar. Shake it vigorously, set aside.

Heat up a pan, roast the pumpkin seeds a bit and set on side. Now slice up your Halloumi and fry it on the pan from both sides. Meanwhile toast your bread. If you are bringing it to your work, you could fry it before work and bring everything on separate dish. 

Take your toast, top it with salad, then Halloumi, then add some pumpkin seeds and spread on some dressing.
