Egg Muffins with quinoa and Feta

These are small, tasty and filling. I’d like to think it’s the black olives that give an extra taste bunch, but then again, I loooooove black olives.

These muffins are packed with important amino acids. Amino acids are proteins what help our body to function properly. There is difference on protein and the protein. One has non essential amino acids, and another one has the essentials. Most amino acids are combined with the minerals, but just having enough minerals without good quality protein and our body is not able to get the quality from food we deserve.

Besides the amino acids, it has high amount of DV of Vitamins like B2, B12, B9, K and Choline. Or minerals like copper, Phosphorus and Selenium.

In Micro followers: F21 C8 P34

  • 2tbs avocado oil
  • 1 cup tomatoes
  • 2 cups of spinach
  • 1/4 cup of onion
  • 1/4 cup of black olives
  • Bunch of oregano
  • 1 cup cooked quinoa
  • 8 eggs
  • 1 cup of Feta
  • Salt and pepper

Pre heat oven to 180C

Set up muffin tray

In shallow pan heat avocado oil together for five minutes with tomatoes, spinach, olives, onions and oregano. Leave on a side to cool.

Beat eggs in separate bowl, add feta and quinoa. Mix in the vegetable mix from pan.

Pour it in the muffin pan.

Bake it for 30 minutes.
